easy fish tacos

ingredients:

  • 100g red cabbage
  • 1 plum tomato
  • ½ small red onion
  • ¼ bag fresh coriander
  • 1 lime
  • 80g santa maria guacamole
  • 4 fresh cod goujons
  • 4 small tortillas

fish taco sauce ingredients:

  • 1/2 cup sour cream
  • 1/3 cup mayo
  • 2 tbsp lime juice (from 1 lime)
  • 1 tsp garlic powder
  • 1 tsp chipotle sauce

instructions:

  1. prep the red cabbage:

finely slice the red cabbage and sprinkle with a pinch of salt. allow it to soften for approximately 15 minutes.

  1. prepare the salsa:

dice the plum tomato and red onion. chop the fresh coriander. mix together the tomatoes, red onion, and coriander. season the salsa with a pinch of salt and lime juice.

  1. cook the fish:

heat a deep fat fryer to 160°c.

cook the fresh cod goujons until golden brown, approximately 2-3 minutes, or until they reach an internal temperature of 75°c.

  1. toast the tortillas:

toast each tortilla in a dry, hot frying pan until both sides are lightly browned and toasted.

  1. assemble the tacos:

fill each tortilla generously with the softened red cabbage, flavorful salsa, and crispy cod goujons.

  1. drizzle with homemade taco sauce:

in a bowl, combine sour cream, mayo, lime juice, garlic powder, and chipotle sauce to create the delicious fish taco sauce. drizzle the homemade sauce over the filled tacos, ensuring each bite is bursting with creamy goodness.

  1. serve and enjoy:

garnish the tacos with dollops of santa maria guacamole. serve with fresh lime quarters on the side for an extra zing.
